Unique to licorice root is Glycyrrhizic Acid as well as a wide array of flavoniods, naturally occurring sugars, starches, gums, color bodies, and inorganic salts. All can be found in pure licorice extract. Ammoniated Glycyrrhizin (AG) involves the percepitation of the flavonoids referred to as “glycyrrhizin” from the pure extract.
The various salt forms, ammonium, potassium, and sodium, of Glycyrrhizic Acid result from further alcohol extractions, de-colorization, fine filtrations, various salt neutralizations, crystallization, and drying.
