Licorice root is collected in the wild from roots that can grow in a variety of different geographic regions under varying climactic conditions. As a result, the inherent chemical and flavor profile of a root can vary significantly between regions and crop years. To offset these variables, MAFCO maintains a wide variety of licorice roots and other semi-finished licorice raw materials to consistently meet each customer’s individual licorice extract flavor profile and quality needs.

Licorice root can be extracted, evaporated and finished using a number of different processing techniques and by making subtle adjustments to the processing parameters.
