What is Aspartame?

Aspartame is an artificial sweetener that is approximately 180 times sweeter than sugar. It is classified by the FDA as a nutritive sweetener with around 4 calories per gram; however, the extremely small doses that are needed in applications contribute no appreciable caloric value.

Where is it used?

While aspartame is used as a tabletop sweetener as well as in a wide range of food products, it is primarily employed in diet soft drinks which account for over 80% of aspartame demand.

Application issues with Aspartame

Aspartame exhibits irregularities in its sweetness profile and contributes bitter off-notes to applications. Its stability under heating and in acidic solution is also limited. Furthermore, it does not bulk like sugar and thus is limited in its applicability to products that rely on sugar’s ability to add substance, such as candy or frozen desserts.
